It’s hard to find something to fix for dinner that everyone will enjoy. When I find something we all like I do a little happy dance. When it is something that is actually healthy I downright boogie around the kitchen. That’s how I feel about this homemade pizza that I included on my monthly dinner menu.
I found this recipe in a Cooking Light cookbook full of quick meals. It is so easy David makes it, which is funny because a few weeks ago when I went to make it I realized that he doesn’t follow the recipe at all. Huh? Yeah. The first time he made it I was missing ingredients so he kind of came up with something on his own. Either way we all love it.
Here’s the recipe the Cooking Light way and the David way.
Homemade {Mexican} Pizza
1 pre-made thin style pizza crust from the refrigerated section
1 pound lean ground beef
1 can Mexican style diced tomatoes (or one jar of your favorite spaghetti sauce)
2 cups Mexican style low fat cheese (or as much of you like of whatever kind of cheese you have)
A little bit of shredded Parmesan cheese
Cooking Spray
Pre-heat oven according to the directions on the pizza dough. Spray a 9×13 pan with cooking spray. Place the pizza crust in the pan, spreading to fit.
Brown the ground beef until done. Add the diced tomatoes (or about a half jar of spaghetti sauce) and heat until warm. Spoon meat mixture on top of pizza crust. Top with Mexican style shredded cheese (or just the regular cheese) and then a little bit of Parmesan.
Cook according to the directions on the pizza crust (or about thirty minutes when all of the cheese is melted). Slice into six pieces. Chow down on the yumminess and enjoy the general quiet as your children actually enjoy something that you cooked.
Being a mom means sometimes we have to count the small everyday victories instead of just concentrating on the big picture. A meal my entire family likes? Totally goes in my win column.

Hooray for something everybody eats! That is a hard feat to accomplish!
We make something similar and it’s a hit! I generally use leftover chicken, a can of black beans, salsa and Mexican cheese. Yummy!
Oh I’m going to have to try that. It sounds yummy. So the salsa replaces the sauce? Smart.
